Ingredients

  • 3 ounce sweet potatoes
  • 4 ounce broccoli head
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 1 cup grated cheddar
  • 1 cup Almond flour
  • 2 cup vegan buttermilk
  • 2 teaspoon salt
  • 2 teaspoon ground black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup olive oil

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Line a baking tray with baking paper.

  3. Cook the sweet potatoes in boiling water for 15 minutes.

  4. Next, cook the broccoli in salted boiling water for 5 minutes.

  5. Drain the sweet potatoes and broccoli.

  6. In a food processor, combine the sweet potatoes and broccoli, pulse until smooth.

  7. Add peas, salt, pepper, corn, cheddar cheese, and pulse again for 1 minute until fully combined.

  8. Shape the mixture into 12 nuggets.

  9. Place flour, buttermilk, and breadcrumbs into separate bowls.

  10. Dip each nugget into the flour, buttermilk, and then breadcrumbs.

  11. Place all the breaded nuggets on the lined tray.

  12. Lightly brush the nuggets with olive oil.

  13. Bake the nuggets for 25 minutes, turning them over every 10 minutes.

  14. Serve immediately.
