Mustard Zucchini Rounds

This is one of the easiest vegetable recipes you can find out there, and definitely an easy zucchini recipe. Make these delicious Mustard Zucchini Rounds and your kids and family are sure to love them. Crisp, crunchy and tasty!

Ingredients

  • 1 large zucchini, cut into 1/2 inch slices
  • 1/2 cup seasoned Panko crumbs or seasoned bread crumbs
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • 1/4 cup dijon mustard
  • 2 tablespoon butter, melted

Instructions

  1. Preheat oven to 425 degrees F.
     
  2. In a small bowl, combine the crumbs, thyme, and garlic salt; set aside. Combine mustard and butter.
     
  3. Brush on each side of zucchini, then dip in crumb mixture on each side to coat.
     
  4. Place in shallow pan. Bake for 10 minutes, turn and bake 7 minutes more or until tender.
