Hungarian Zucchini in Dill Sauce

Hungarian Zucchini in Dill Sauce is a delicious summer squash recipe that is perfect for those warmer months. The dill sauce in this recipe adds a tantalizing flavor that will have you coming back for seconds.

Ingredients

  • 2 pound zucchini or summer squash
  • 1 teaspoon salt
  • 2 tablespoon vinegar
  • 2 tablespoon shortening, oil, butter, or margarine
  • 2 tablespoon flour
  • 1 tablespoon paprika
  • 1 tablespoon finely chopped fresh dill
  • 1 teaspoon finely chopped onion
  • 1/2 cup water
  • 1/2 cup sour cream

Instructions

  1. Grate the zucchini and sprinkle with salt and vinegar; let stand for 20 minutes.
     
  2. During this time, heat the shortening, add flour and stir constantly until mixture is light brown.
     
  3. Remove from heat and add paprika, dill and onions; pour in water and mix until a smooth sauce is formed.
     
  4. Then add the zucchini which has been squeezed by the handful to remove excess liquid.
     
  5. Mix carefully and add more water if too dry.
     
  6. Cook over low heat until barely tender.
     
  7. Fold in sour cream and blend until smooth.
