Cheese Stuffed Zucchini

Cheese stuffed zucchini is not only easy, it is amazingly good. I mean what could be bad about adding some delicious cheese to an already yummy vegetable and then baking it? OK, there are a few more ingredients, but not many, and the result is awesome!

Ingredients

  • 4 large zucchini
  • 6 ounce diced mozzarella
  • 1/4 pound fresh mushrooms, sliced
  • 1 tablespoon fresh parsley
  • 2 garlic cloves, minced
  • 1 teaspoon sweet basil
  • 3 tablespoon romano cheese
  • salt and pepper, to taste
  • 1 pinch nutmeg
  • 2 tablespoon olive oil
  • bread crumbs

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cut ends off zucchini, wash, and scrape slightly.  Cut in half, lengthwise, and scoop out pulp.
     
  3. Blend pulp with remaining ingredients, except bread crumbs.
     
  4. Fill zucchini with mixture.
     
  5. Arrange side by side in oiled baking dish.
     
  6. Sprinkle with bread crumbs and drizzle with olive oil.
     
  7. Cover and bake 30 minutes.
     
  8. Remove cover and bake 15 minutes.
