Cabbage and Bacon Mashed Potatoes

This frugal dish combines two of our all-time favorite foods: crispy bacon and mouthwatering cabbage. If you're a fan of both of these foods, you'll love this recipe for Cabbage and Bacon Mashed Potatoes. Put a delicious twist on traditional mashed potatoes with this unique dish, one of the easiest cabbage side dishes we've come across.

Ingredients

  • 3 bacon slices, chopped
  • 1 1/4 pound cabbage (about 1/2 small head), cut into 1/2-inch pieces
  • 1/2 cup water
  • mashed potatoes (home-cooked or boxed)

Instructions

  1. In a large skillet cook bacon over moderate heat until crisp. With a slotted spoon transfer bacon to paper towels to drain.
     
  2. Add cabbage to bacon fat in skillet and cook, stirring occasionally until golden, about 5 minutes.
     
  3. Add water and simmer until evaporated and cabbage is tender.
     
  4. Add bacon and season with salt and pepper.
     
  5. Stir mixture into potatoes.
