Warm Spinach Salad with Dried Figs and Feta

Start your holiday dinner off the right way by beginning your meal with this Warm Spinach Salad with Dried Figs and Feta. This incredible spinach salad recipe is an easy and delicious way to add a leafy green vegetable to your table this fall. Your guests will be extremely impressed with the flavorful combination of figs, feta, and red onion in this dish, but what they don’t know is that this Thanksgiving salad recipe only takes about 10 minutes to make!
Before you know it, this meal will become a favorite spinach salad recipe. Luckily, since this dish uses dried figs instead of fresh ones, you can make this salad all year long! This recipe is a great option for an easy weeknight dinner, side salad, or lunch. Plus, this salad is great for vegetarians. Simply leave out or substitute for the feta, and this dish is a great option for vegans as well!

Ingredients

  • 1 tablespoon finely chopped red onion
  • 1 1/2 tablespoon oilve oil
  • 1/2 cup (about 10) Sun-Maid Calimyrna Figs or Mission Figs, stemmed and quartered
  • 2 tablespoon packed brown sugar
  • 2 tablespoon sherry or cider vinegar
  • 8 cup (6 ounces) baby spinach leaves, rinsed and dried
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted, chopped hazelnuts
  • cracked black pepper

Instructions

  1. In a medium skillet or saucepan over medium heat, SAUTE onion in olive oil for 2 minutes or until softened.
     
  2. Stir in figs, brown sugar and sherry or vinegar.
     
  3. Simmer 30 seconds, stirring until figs are coated.
     
  4. In a large bowl, TOSS spinach and warm fig dressing.
     
  5. Serve immediately sprinkled with feta and nuts.
     
  6. Season with black pepper to taste.
