Stuffing Bites

This is a great appetizer that will have your family coming back for more. Stuffing Bites is a new way to eat stuffing. Out with the old quick appetizer recipes and in with the new creative Stuffing Bites.

Ingredients

  • 3 cup day-old bread crumbs
  • 2 tablespoon onion, minced
  • 2 tablespoon celery, minced
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoon sweet red pepper, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon basil
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon ground sage
  • 5 tablespoon melted butter, divided
  • 1 cup mashed potato (no butter or milk, just a potato mashed)
  • 2 large eggs, separated

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In a large bowl, combine the first seven ingredients, add the sage, mustard and basil, and mix well.
     
  3. In another bowl, add 4 tbsp of melted butter to the potato, add the egg yolks and mix well. Add to the breadcrumb mixture.
     
  4. Beat the eggwhites until stiff but not dry; fold lightly into bread mixture. Form the mixture into 8 or 9 balls about 2" in diameter.
     
  5. Place on a greased baking sheet.
     
  6. Bake in a 350 degrees F oven for 30 minutes, then turn up oven temperature to 400 degrees F, drizzle remaining butter over the balls and bake a further 10 to 15 minutes, until golden.
