Mushroom Gravy: Turkey's Best Friend

Mushroom Gravy Turkey's Best Friend is a tasty mushroom gravy recipe that can double as a quick recipe for Thanksgiving. This thick, rich gravy will be a nice to addition to your make-ahead Thanksgiving recipes.
Notes
For a richer flavor, replace part of the oil with vegan margarine.
Ingredients
- 1/2 onion, chopped
- 1 clove garlic
- 1 tablespoon vegetable oil
- 1 cup mushrooms, sliced
- 2 tablespoon whole-wheat pastry flour
- 1 cup water or vegetable stock
- 1 tablespoon soy sauce
- 1/2 teaspoon molasses
- 1/4 teaspoon savory
- 1/4 teaspoon thyme
- Dash of pepper
Instructions
- In a medium saucepan over medium-high heat, saute onion and garlic in oil until soft.
- Add mushrooms and cook 5 minutes over low heat.
- Stir in flour; cook over medium heat for 2 minutes.
- Add water or stock, soy sauce, and molasses.
- Cook, stirring, until thickened, about 3 to 4 minutes.
- Season with herbs and pepper.
