Mushroom Gravy: Turkey's Best Friend

Mushroom Gravy Turkey's Best Friend is a tasty mushroom gravy recipe that can double as a quick recipe for Thanksgiving. This thick, rich gravy will be a nice to addition to your make-ahead Thanksgiving recipes.

Notes

For a richer flavor, replace part of the oil with vegan margarine.

Ingredients

  • 1/2 onion, chopped
  • 1 clove garlic
  • 1 tablespoon vegetable oil
  • 1 cup mushrooms, sliced
  • 2 tablespoon whole-wheat pastry flour
  • 1 cup water or vegetable stock
  • 1 tablespoon soy sauce
  • 1/2 teaspoon molasses
  • 1/4 teaspoon savory
  • 1/4 teaspoon thyme
  • Dash of pepper

Instructions

  1. In a medium saucepan over medium-high heat, saute onion and garlic in oil until soft.
     
  2. Add mushrooms and cook 5 minutes over low heat.
     
  3. Stir in flour; cook over medium heat for 2 minutes.
     
  4. Add water or stock, soy sauce, and molasses.
     
  5. Cook, stirring, until thickened, about 3 to 4 minutes.
     
  6. Season with herbs and pepper.
