Mashed potatoes are a classic side dish around the holidays, but we enjoy them all year long. They are cost-effective and delicious, plus they are a real crowd pleaser. Unless you are trying to cut down on carbs, everyone is glad to see a big bowl of mashed potatoes on the table.

Ingredients

  • 6-8 yukon gold potatoes, quartered
  • 1 (8-ounce) can evaporated milk
  • 1 stick butter
  • salt and pepper, to taste

Instructions

  1. Boil potatoes until fork tender.  Add the butter in portions, allowing each addition to melt. Mix well.

  2. Smash potatoes while adding a little evaporated milk at a time until creamy.

  3. Add salt and pepper to taste.
