Grandma's V8 Beef Stew

My grandma used to make one of the meanest and meatiest bowls of beef stew. Loaded with fresh vegetables and herbs, the ingredients simmer together to create a one-of-a-kind dish of pure deliciousness. Ingredients

  • 1 to 2 pounds meat browned in 1 TBSP oil and drained
  • 1 large can of V-8 juice
  • 1 medium onion chopped
  • 2 cloves of garlic chopped
  • 4 beef boullion cubes
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried mustard
  • 1 tablespoon chili powder
  • 1 cumin or more
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 bay leaves
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon thyme
  • 1 teaspoon sugar
  • 1 large can diced tomatoes (do not drain)
  • 1 can (8-ounces) tomato sauce
  • 2 med potatoes, sliced
  • 3 large carrots sliced thinly
  • 1 cup frozen corn
  • add any other vegetable you like

Instructions

  1. Brown beef and remove any drippings.
     
  2. Add all ingredients to large pot and simmer until vegetables are tender. About 3 hours.
     
  3. Serve with sweet cornbread.
