Crazy Corn and Pumpkin Stew

For a true taste of fall whip up a batch of this Crazy Corn and Pumpkin Stew. It will make other soup and stew recipes pale in comparison with taste and simplicity. It's super budget friendly too, making this an ideal repeat dish.

Ingredients

  • 10 ounce bag of frozen corn, off the cob (or 3 fresh corn cobs)
  • 1 small pumpkin (about 3 pounds)
  • 1 yellow onion, peeled and sliced
  • 1 cup water
  • salt and pepper to taste

Instructions

  1. Shell the corn from the cob and mash to a pulp. I use my food processor for this. If using frozen corn, you need not let it defrost if you have a food processor.
     
  2. Peel and seed the pumpkin and cut into small pieces.
     
  3. Place all ingredients in a covered saucepan and simmer until the pumpkin is soft, about 30 minutes. Serve hot.
