  • 1 tablespoon olive oil
  • 450 gram sweet potatoes, peeled and cut into chunks for cooking
  • 1 red chilli, chopped
  • 1 lemongrass stalk, crushed to release the flavour
  • 2 tablespoon Thai red curry paste
  • 750 milliliter fresh chicken stock, or water with 2 stock cubes
  • 150 milliliter coconut cream
  • 2 stalks fresh coriander, chopped
  • 1 lime
  • 1 teaspoon fish sauce
