Sweet Potato Soup

Ingredients

  • 6 large sweet potatoes, cooked and mashed or pureed
  • 1 onion, diced
  • 3 stalks of celery, diced
  • oil
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 quarts of chicken broth
  • salt and pepper

Instructions

In a small amount of oil, saute onions and celery with bay leaf and cinnamon. Add broth and sweet potatoes and cook and simmer 20 minutes. Remove cinnamon stick and bay leaf and use a hand blender or blender to puree soup smooth. Season to taste. Serve chilled or heated. Serves 8.
