Spicy Baked Potato Soup

This Spicy Baked Potato Soup packs a little heat! If you like your potatoes jam-packed with flavor, this soup is for you. Wake up your taste buds with this spicy, quick, and easy baked potato soup!

Ingredients

  • 1/2 cup unsalted butter
  • 3 slices white onion, chopped
  • 1/3 cup all-purpose flour
  • 2 cup water
  • 2 cup chicken stock
  • 2 teaspoon basil
  • 3 tablespoon hot sauce
  • salt and pepper to taste
  • 1 1/3 cup potato flakes
  • 2/3 cup milk
  • 2/3 cup heavy cream
  • 3 potatoes, baked
  • sharp Cheddar cheese, shredded
  • bacon, crispy and crumbled
  • scallions, finely chopped

Instructions

  1. Melt butter in a frying pan and saute the onions.  Add flour, stirring constantly.
     
  2. Add water and chicken stock and keep at medium heat.
     
  3. In a separate bowl mix basil, hot sauce, salt, and pepper. Set aside.
     
  4. To the cooked onion mixture, add potato flakes, milk, heavy cream, and bowl of spices and let simmer.
     
  5. Cut baked potatoes into bite sized chunks, add to soup. Cook until all ingredients are heated through, about 10 minutes.
     
  6. Serve in bowls topped with cheese, bacon and scallions.
