Potato Leek Soup

Ingredients

  • 2 leeks, white and light green part only, rinsed well
  • 2 stalks celery
  • 2 cup diced potatoes

Instructions

Chop leek and celery and cook in butter for about 10 minutes. Cover with water - and let boil for another 10 minutes. Add cubed potatoes and more water to cover. Bring to boil and simmer until potatoes are soft. Add salt and pepper along the way. Separate vegetables from liquid and process vegetables in Cuisinart or blender until smooth and re-add to liquid. Heat a bit to serve hot. Add more water or some milk if required.
