Onion Tomato Soup

Ingredients

  • 2 large sweet Spanish onions (about 6 cups sliced)
  • 1/4 cup margarine
  • 2 can (14 oz) stewed or whole tomatoes
  • 2 can beef consomme, plus 2 cans water
  • 1/2 tsp basil
  • 1/2 tsp salt, 1/4 tsp pepper

Instructions

Peel and slice onions. Saute in marg. in large saucepan. Add tomatoes, broth and spices. Cook over low heat for 30 min. Serve with toasted french bread sprinkled with grated Parmesan.
