Ingredients

  • 1 medium ripe avocado
  • 2 romaine lettuce leaves
  • 1 cup (240 ml) coconut milk, chilled (from cartons or else dilute the canned coconut milk)
  • 1 Tablespoon (15 ml) lime juice
  • 20 fresh mint leaves
  • Salt to taste
  1. Place all the ingredients into a blender and blend really well. The soup should be thick but not as thick as a puree.

  2. Chill in fridge for 5-10 minutes and serve.
