Ingredients

  • 1 cup Olive Oil
  • 1 cup Butter
  • 1 Yellow Onion
  • 2 Carrots
  • 2 Ribs Celery
  • 1 pound Green Beans
  • 1 head Cabbage
  • 2 Medium Zucchini
  • 16 ounce Diced Tomatoes
  • 5 ounce Spinach
  • 6 cup Vegetable Stock
  • 2 teaspoon Salt
  • 1 teaspoon Pepper
  • 16 ounce Great Northern Beans
  • 16 ounce Dark Red Kidney Beans
  • 8 ounce Ditalini Pasta
  • Parmesan Cheese, Basil, parsley
  1. In a large dutch oven (7.5 or 8 qt), heat oil and butter until melted. Add the onions, carrots, celery, and green beans. Cook for 10 minutes stirring occasionally.

  2. Add in the cabbage, zucchini or squash, and diced tomatoes. Cook for another 10 minutes stirring occasionally.
