Ingredients

  • 4 cup broccoli florets
  • 3 cup vegetable stock or chicken stock
  • 3 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • Olive oil, a drizzle

Instructions

  1. Heat a bit of olive oil in a saucepot over medium-high heat.

  2. Add garlic and sauté until fragrant.

  3. Toss in the broccoli and stir until coated with oil.

  4. Pour in the vegetable stock and heavy cream.

  5. Bring to a boil. Reduce heat and simmer for 15 minutes or until the broccoli is tender.

  6. Add the shredded cheese gradually ½ cup at the time and stir until the cheese has melted before adding more.

  7. Serve warm.
