French Onion Soup

Ingredients

  • 1 teaspoon olive oil
  • 1 clove garlic, smashed & chopped fine
  • 6 - 8 slices 1" thick of crusty bread

Instructions

Combine olive oil & garlic. Brush over crusty bread on both sides Bake at 375F. for 10 - 20 min. to toast thoroughly 2 Tbsp. butter 1 Tbsp. olive oil 1 lb. onions, sliced thin (about 3 1/2 c.) 1/2 tsp. salt Combine butter & olive oil in frypan, Saute onions on low heat for 20 - 30 min. until golden brown, stirring occasionally. Sprinkle over: 4 tsp. flour. Cook, stirring for 1 - 2 minutes. Add: 4 cups beef stock - fresh if possible or made with Knorr beef cube salt to taste fresh ground pepper to taste Ladle into 4 oven-proof bowls. Place 1 or 2 croutes on top. Sprinkle 1/2 c. grated swiss cheese among the 4 bowls over croutes. Place under broiler just until bubby & slightly brown. Watch carefully!
