Ingredients

  • 10 oz cabbage
  • 4 oz red bell peppers
  • 1 oz red onions
  • 6 cups vegetable broth
  • 1 cup sour cream
  • 4 cups white vinegar
  • 2 tbsp cayenne pepper
  • 4 tbsp salt for brine
  • ½ cup butter
  • 5 oz russet potatoes
  • Salt and pepper for taste
  1. Julienne cabbage, peppers, and onions.

  2. Transfer the sliced vegetables into a non-reactive bowl.

  3. Soak in 4 tablespoons of salt, white wine vinegar, and 2 tablespoons of cayenne pepper for 12 hours.

  4. Dice potatoes and boil until tender.

  5. Mash half the potatoes.

  6. Heat vegetable broth until simmering while stirring in mashed potato.

  7. Season with a bit of salt and ground pepper.

  8. Lower temperature and add sour cream.

  9. Add pickled vegetables and remaining diced potato to each bowl as a garnish.
