Cream of Celery Soup

Ingredients

  • 2 or 3 stalks of celery
  • 6 ounce milk
  • 1/2 pint fat free stock or water with one beef stock cube
  • 1 small onion
  • 2 level teaspoons cornflour
  • salt & pepper

Instructions

2 servings. Wash celery, chop finely, chop onion, cook gently for 20 minutes in water or stock. Blend cornflour in milk and add slowly, stirring until it just comes to the boil. Turn down heat and simmer further 10 minutes.
