Cream of Carrot Soup

Ingredients

  • 1-2 tbs butter or margarine
  • 1 tbs curry powder
  • 1/2 tsp paprika
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp garlic, crushed
  • 1 sm onion, freshly diced
  • 2-3 lg carrots, finely diced
  • 6 cup water
  • 2 tbs lemon juice
  • 2 tbs soy sauce
  • 1 tsp salt
  • 1 cup sour cream
  • 1 cup half-and-half

Instructions

6-8 servings. In a 3-quart pot melt butter. Roast spices for 1 minute. Add the onions and saute several minutes. Add the finely diced carrots and water. Simmer until carrots are very soft. Puree in a blender. Add all remaining ingredients. Heat slowly and serve.
