Brown Windsor Soup

Ingredients

  • 525g butter
  • 1 small onion finely chopped
  • 1 leek green only chopped
  • 1 small carrot diced
  • 350g stewing steak
  • 1 tablespoon flour
  • 1 2/5 litres beef stock
  • 1 bouquet garni
  • 1 tablespoon chopped parsley

Instructions

Melt butter in a large pan, cook onion for 1-2 minutes. Add leek and carrot cover and let sweat for about 5 minutes. Add the beef and stir until brown. Mix flour with a little stock to make a paste. Add paste and rest of stock to the pan. Bring everything to the boil. Add bouquet garni, cover and simmer very gently for 2 hours. Remove the bouquet garni. Liquidise the soup; serve garnished with parsley
