Beef Stock

Ingredients

  • 2 pound beef bones (up to 3 lbs)
  • 8 c water
  • 1 onion, unpeeled
  • 1 carrot, scrubbed & sliced
  • celery leaves
  • 3 sprigs parsley
  • 6 whole peppercorns
  • 3 whole cloves
  • 1 ts crushed basil leaves
  • 1 clove garlic
  • 2 tb vinegar
  • 2 ts salt

Instructions

Brown bones slowly in a heavy pot. Add remaining ingredients and simmer, covered, for several hours. Strain broth and cool. Skim fat from top of stock.
