Ingredients

  • 3/4 pound cabbage, cored and chopped finely
  • 3 slices bacon, chopped
  • 1 medium onion, chopped
  • 1 large russet potato, peeled and diced
  • 2 cup chicken broth
  • 1 carrot, chopped
  • 2 tablespoon dry white wine
  • 1 1/2 teaspoon sugar
  • 1/2 teaspoon caraway seeds
  • 1 cup half-and-half
  • 1 tablespoon dried dillweed
  • hot pepper sauce, to taste
  • salt, to taste
  • pepper, to taste

Instructions

  1. In a Dutch oven, cook bacon over moderate heat until crisp.
     
  2. Add onion and the diced potato; cook and stir until the onion softens.
     
  3. Add chicken broth, cabbage, carrot, wine, sugar and caraway seeds. Bring soup to a boil, then reduce heat and simmer covered, until vegetables are tender, about 30 to 40 minutes.
     
  4. Stir in half-and-half and simmer soup, uncovered, for about 15 minutes.
     
  5. Stir in dill, hot sauce, salt and pepper, to taste, before serving.
