Old Time Farmer's Cheese Soup

Easy soup recipes are a dime a dozen, but it isn't often that you come across a delicious soup with as many unique components as this one. Featuring russet potatoes, cauliflower, carrots, and of course cheese, this Old Time Farmer's Cheese Soup is an unexpected delight that your family will love. When you take a classic potato soup recipe and give it a makeover, you end up with a fabulous new soup to add to your repertoire. This cheesy dish is exactly that!

Ingredients

  • 1/4 cup (1/2 stick) butter
  • 1 1/2 pound russet potatoes, peeled and diced
  • 1 1/2 pound cauliflower, trimmed and cut into florets
  • 1 pound carrots, peeled and sliced
  • 1 large onion, chopped
  • 4 cup canned vegetable broth
  • 6 French bread slices (1-inch-thick)
  • 12 ounce Gouda cheese, wax removed, cheese sliced

Instructions

  1. Melt butter in heavy large Dutch oven over medium-high heat.
     
  2. Add potatoes, cauliflower, carrots and onion; saute until onion is golden brown, about 7 minutes.
     
  3. Add 4 cups broth and bring to a boil. Reduce heat; simmer until vegetables are tender, adding more broth if soup is too thick, about 30 minutes.
     
  4. Season to taste with salt and pepper.
     
  5. Preheat broiler. Transfer soup to large broiler-proof bowl or individual broiler-proof soup bowls. Arrange bread slices atop soup. Place cheese over bread, covering completely.
     
  6. Broil 6 inches from heat source until cheese melts and is golden, watching closely to avoid burning, about 2 minutes. Serve immediately.
