Cheater's Chicken Soup

Get full flavor for half the work with this Cheater's Chicken Soup recipe! The "cheating" part comes in because you use a store-bought rotisserie chicken, but the rest of the recipe is up to you! If you're looking for chicken soup recipes that taste great but won't keep you in the kitchen for hours, this dish is for you!

For extra heartiness, add rice to soup.  If adding rice, wait until the water is boiling, and then add your desired uncooked rice.  By the time the vegetables are cooked the rice should be done as well.



 



 

Ingredients

  • 1 rotisserie chicken
  • variety of vegetables (celery, carrots, cabbage, potatoes, corn, zucchini, cilantro, and onions)
  • Bouillon cubes or chicken broth
  • For garnish: Cilantro and limes

Instructions

  1. Put a pot of water on to boil or start boiling the chicken stock.

  2. While the water is warming up, chop all the vegetables.

  3. Once the water is at a rolling boil add bouillon cubes or powder. If using store bought chicken stock, skip this step.

  4. Add all vegetables to the boiling liquid.

  5. Pull all meat off the rotisserie chicken. Add the chicken to vegetables and broth, place lid on the pot, and let it all simmer until the vegetables are soft. This takes around 15-20 minutes depending on how thickly you chopped your veggies.

  6. Add cilantro and lime to top, if desired.
