Chocolate Peanut Butter Log

Ingredients

  • 1 pkg. Chocolate Alba dry milk mix
  • 2 T peanut butter (creamy or chunky)
  • 1 C quick cooking oats
  • 2 packets sweetner
  • 2 T raisins
  • 1-2 t. instant coffee crystals
  • 1-2 T. water

Instructions

Mix Alba, PB, oats, sweetner and raisins in a bowl. Soak the coffee in the water for a minute. Add the liquid coffee to the dry ingredients until the mixture adheres and can be rolled on plastic wrap into a log. This makes a wonderful, filling breakfast or anytime snack. It will be about 350-400 calories and can be cut in half and still have a nice portion. I've taken it to work and not refrigerated it for several hours and it's still great. Sometimes I've rolled it into balls and coated it with powdered sugar for a snack for the kids.
