Carmel Corn

Ingredients

  • 6 qts. popped popcorn
  • 1 c. butter
  • 2 c. packed dark brown sugar
  • 1/2 c. light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2-3 c. nuts (optional)

Instructions

Heat oven to 250F. Melt butter over low heat. Add next 3 ingredients and bring to a boil, stirring constantly. Cover and gently boil without stirring for 4 minutes. Remove from heat and carefully add soda and vanilla (it will froth and foam). Spray large baking sheet or roasting pan with cooking oil spray. Combine popcorn and carmel mixture, mixing well. Spread popcorn out on pan. Bake about an hour, stirring every 15 minutes. Cool completely. Break apart and store in tightly sealed container.
