Mimolette Mac and Cheese Recipe

Ingredients ½ pound shell pasta 1 cup heavy cream ¼ cup white wine 1 cup grated Mimolette, plus more for sprinkling 1 large tomato, chopped 1 T butter 3 cloves garlic, minced 3 tbsp bread crumbs 1 tbsp olive oil Directions Preheat oven to 350 degrees. Place macaroni in a large pot of boiling water with a bit of salt and cook 8-10 minutes or, to desired tenderness. Drain and rinse with warm water. In a saucepan, under low heat, melt butter with garlic until golden. Add white wine and tomato. Simmer 4-5 minutes. Add cream and cheese. Stir until melted. Turn off heat and stir in the macaroni until blended. Grease a casserole dish with the olive oil and transfer the mixture from the pot to the casserole dish. Top the mixture with bread crumbs and more grated mimolette. Bake for 30 minutes.
