Mediterranean Chicken Meatballs

Are you tired of the same old side dish recipes? Well, you don't have to be. Mediterranean Chicken Meatballs make it easy to incorporate new flavor palates into your family dinners. These meatballs include classic Mediterranean ingredients like mint, yogurt, Kalamata olives, and cucumber. This means that this dish has a fresher, lighter taste than most heavier home-style dishes. You can serve this chicken meatball recipe as a side dish, an appetizer, or even a snack. Your family and friends will feel like they're vacationing in the Mediterranean when they eat these meatballs.

Ingredients

  • 1 pound ground chicken, 7% fat
  • 1/4 bunch fresh tarragon
  • 1/4 bunch fresh dill
  • 1 ounce Dijon Mustard
  • 1 fresh shallot, minced
  • 2 clove fresh garlic, minced
  • 6 Musco Family Kalamata Olives, pitted and minced
  • 1/2 ounce panko bread crumbs
  • sea salt, to taste
  • black pepper, to taste
  • 8 red grape tomatoes, cut in 1/2 lengthwise
  • 4 ounce plain yogurt
  • 1 lemon, zested and juiced
  • 1 ounce cucumber, seeded and grated
  • 1/8 bunch fresh mint, minced
  • 1/4 ounce Crisco Olive Oil
  • 16 bamboo skewers

Instructions

  1. Preparation Instructions

  2. Mix ground chicken with tarragon, dill, shallots, garlic, mustard, panko bread crumbs and seasonings.

  3. Cook a small sample to check flavor. Adjust if necessary.

  4. Form mix into 1 ounce meatballs.

  5. Chill for 1 hour.

  6. Mix yogurt with lemon juice and zest, cucumber, mint and seasonings.

  7. Cooking Instructions

  8. Cook meatballs in 400 degree oven for 10 to 12 minutes until they register 165 degrees or higher on digital thermometer. Allow to rest for a few minutes.

  9. Skewer a halved tomato and then a meatball. Serve on a puddle of Tzatzki sauce.
