Easy Potato & Sausage Hash

Ingredients

  • 2 tablespoon butter
  • 1 pound smoked sausage, thinly sliced into coins
  • 1 (20-ounce) package of diced hash brown potatoes
  • 1 large onion, thinly sliced
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon dried thyme

Instructions

  1. Melt butter over medium high heat

  2. Add sausage and cook for 5 minutes until rendered, stirring often.

  3. Add in onions and stir well. Cook for 5 minutes to caramelize. Stir often.

  4. Add in the potatoes, salt & thyme. Stir very well, reduce heat to medium low and cover the pot.

  5. Cook covered for 15 minutes. Stir every couple minutes to minimize sticking.
