Lobster Newburg

Ingredients

  • 4 c lobster meat (chopped)
  • 1/4 c butter
  • 1 ts salt
  • 1/4 ts pepper
  • 1 ds cayenne pepper
  • 1 ds mace
  • 1 c whipping cream
  • 3 egg yolks (beaten)

Instructions

Yield: 4 Servings. Saute lobster meat in the butter in a saucepan for 5 minutes. Add all of the spices, and then cook for another 5 minutes. Stir in the cream and the eggs, cook until thickened stirring constantly. May add sherry to taste, if desired.
