Crab Mornay

Ingredients

  • 1 large mud crab, cooked, or frozen crab
  • 2 teaspoon butter
  • 1 tablespoon chopped shallots
  • freshly ground pepper
  • 1 pinch basil
  • 1/2 cup white wine
  • 2 tablespoon warm white sauce
  • mashed potato (optional)
  • grated cheese
  • fine brown breadcrumbs (optional)
  • parsley

Instructions

Remove the meat from the crab, or allow frozen crab to thaw naturally. Heat 1 tablespoon butter in a pan, add shallots and fry gently. Add pepper, basil and the crab meat, heat through gently. Be careful not to overcook. Add wine and white sauce, mix well, reheat. Pour mixture over a base of dry, buttered mashed potatoes, in an ovenproof dish. Alternatively, omit mashed potatoes, and place crab mixture in scallop shells or ramekins. Top with remaining butter, in dabs, and grated cheese mixed, if you like, with some fine brown bread.crumbs. Place dish under griller for. a few minutes to brown cheese. Decorate with parsley and serve. Serves 2 as main course, 4 as an entree
