Cinnamon Scones

Ingredients

  • 8 ounce self-rising flour
  • 1 1/2 ounce margarine
  • 2 ounce caster sugar or soft brown sugar
  • 1 tbsp cinnamon
  • 1 8th cup milk
  • a squeeze of lemon juice
  • (few chopped dates, apricots, sultanas - anything that comes to hand)

Instructions

Rub fat into flour, stir in sugar, cinnamon and fruit (if any). Add a squeeze of lemon juice to milk to sour it (makes scones rise better) and stir in to make dough. Place dough on floured board and flatten to about 1/2 inch with hand. Cut into rounds with scone cutter. Bake at gas mark 7 for 15 mins. Just as delicious if allowed to get a few days old, toasted and coated thickly with butter.
