Biscuits

Ingredients

  • 3 cup self-rising flour
  • 1/2 cup white shortening
  • cold buttermilk to make the dough stick together

Instructions

Preheat oven to 375 F. With your hands rub the shortening into the flour until mixture resembles fine cornmeal. Using a long-tined dinner fork stir in cold buttermilk until doughball follows fork. With floured hands lightly pinch off lumps of dough, roll into ball and flatten onto baking sheet; bake 8 - 12 minutes (until tops are golden). This recipe makes 18 small or 12 "cathead" biscuits. You can use sweet milk , 1 Tbsp white vinegar in a 1-cup measure and fill with sweet milk will give an acceprtable substitute for buttermilk.
