Couple's Favorite Shepherd's Pie

Ingredients

  • 7 red potatoes
  • 1/2 pound ground beef
  • 1/4 head cabbage, shredded
  • 1/2 pound mushrooms, sliced
  • 1 small onion, chopped
  • 3 clove garlic, minced
  • 1 large carrot, grated
  • 1/4 cup sunflower seeds, or more if desired
  • 1/2 cup raisins
  • 2 tablespoon butter or margarine
  • 1/2 cup nonfat yogurt
  • 1 tablespoon oil
  • pepper, to taste
  • splash of white wine

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Brown the ground beef in a skillet. 
     
  3. Cook the potatoes in their skins.
     
  4. Heat the oil in a skillet over medium heat. Saute the garlic, then onion, until soft.
     
  5. Add the mushrooms, sautee until they shrink a bit; add the cabbage, then a splash or two of white wine. Continue stirring until the cabbage softens a bit.
     
  6. Add the carrots, sunflower seeds and raisins. Stir and set aside.
     
  7. Mash the potatoes with a hand masher. They should not be too smooth; the chunks of skin should still be noticable.
     
  8. Add the butter and yogurt to the potatoes, then season with pepper.
     
  9. Spread the ground beef in a 9" x 9" pyrex baking dish. Layer the mushroom/cabbage mixture with all juices on top of beef. Cover with the potato mixture and smooth it out.
     
  10. Bake for 30 minutes; let cool for about 5 minutes and serve.
