Comfort Cooking Turkey Pot Pie

Ingredients

  • 1 pound ground turkey
  • 1 can (14-ounce) chicken broth
  • 3 tablespoon butter
  • 3 tablespoon flour
  • 2 carrots, chopped (approximately 1/2 inch chunks)
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1/2 cup frozen peas
  • black pepper, to taste
  • thyme, to taste
  • tarragon, to taste
  • oregano, to taste
  • rosemary, to taste
  • FOR THE DOUGH:
  • 2 1/4 cup flour
  • 2 1/2 teaspoon baking powder
  • 4 tablespoon butter
  • 1 cup milk

Instructions

  1. Preheat oven to 450 degrees F.
     
  2. Prepare the dough by mixing the baking powder with the 2 1/4 cup of flour.
     
  3. Using your fingers, rub the butter into the flour mixture until there are uniform granules of butter/flour chunks.
     
  4. Stir in the milk.
     
  5. Knead the mixture with your hands until it holds together in a sticky mass. Set aside.

***Note about making the dough crust:  The amount of crust will depend on the type of baking dish you use. For a wide and shallow pan, make the full amount. For a dish that is deep with a relatively narrow diameter, cut the crust recipe in half. 

  1. Saute the turkey until almost completely cooked. Remove from the pan.
     
  2. Melt 1 tablespoon of butter and saute the vegetables (except the peas) until soft. Remove from the pan.
     
  3. Melt remaining 2 tablespoons of butter, stir in the flour, and cook to form a roux.
     
  4. Add the broth and seasonings, cooking until thickened.
     
  5. Put the turkey, vegetable mixture, and the peas in the bottom of a baking dish. Pour the sauce over the filling.
     
  6. Cover the filling with chunks of the biscuit dough. It's ok if the filling is not completely covered.
     
  7. Bake for for 15 minutes, or until crust is firm and somewhat browned.
