Cooking Time15 min

Ingredients

  • 1/2 cup sugar
  • 2 tablespoons flour
  • 2 tablespoons cornstarch
  • 3 cups milk
  • 3 egg yolks, beaten
  • 3 tablespoons butter
  • 1/4 teaspoon vanilla

Instructions

  1. In a medium heavy-bottom saucepan, stir together sugar, flour and cornstarch then add milk and bring to a boil over medium high heat, stirring frequently. Once mixture begins to boil, reduce heat to a simmer and continue to stir and cook until thick and smooth, about 10 minutes. Use a whisk at first, then change to a heat-proof rubber scraper and be sure to scrape the bottom, corners and sides of the pan so it does not burn.

  2. When the mixture is thick enough to mound on a spoon, remove from the heat and, while stirring, add the beaten yolks slowly. Return to the heat over low and cook another 2 3 minutes. Off the heat, stir in the butter and vanilla.
