Ingredients

  • 15 pounds ripe tomatoes
  • 1/2 cup red wine vinegar
  • 2 tsp salt
  • 1 cup of water

Instructions

  1. Blanch the tomatoes in boiling water for 1 minute.

  2. Transfer to a stockpot filled with water and ice.

  3. Remove and peel the tomatoes.

  4. Working in batches, coarsely chop the tomatoes and place them into a food processor.

  5. Pulse until smooth.

  6. Place all the processed tomato in a stockpot and bring it to a simmer.

  7. Maintain the temperature at 200-210 degrees Fahrenheit for 45 minutes, stirring occasionally.

  8. Stir in a cup of water, red wine vinegar, and salt.

  9. Continue simmering for an additional 15 minutes.

  10. Let the sauce cool, then transfer to containers or freezer bags.

  11. Kept the sauce frozen until you need to use it.
