Open faced Corned Beef Sandwiches
Ingredients
- 1 can corned beef
- 1/2 chopped green or red bell pepper
- 1/2 cup chopped onion
- 3/4 cup cubed sharp cheddar cheese
- 1/4 cup Worcestershire sauce
- 2/3 cup catsup
- 1 package English muffins
Instructions
Break up the corned beef with a fork. Mix everything together but the English muffins. Spread equal amounts of mixture on each muffin half - I end up using a full pack of English muffins (6) to make 12 open faces sandwiches. Put on cookie sheet and broil till the cheese melts. These are fantastic - we have them about once a month.
