Halloumi and Tomato Salad Pitta

Ingredients

  • 2 cos lettuce leaves, shredded
  • 1 plum tomato, sliced
  • 1 thin slice sweet onion, separated into rings
  • 1 sprig fresh mint, chopped
  • 1 tsp olive oil
  • 3 thick slices halloumi cheese
  • 1 pitta bread
  • seasoning

Instructions

Preheat the grill to high. Put the lettuce, tomato slices, onion rings and mint in a bowl and toss together with the olive oil and the seasoning. Place the halloumi cheese on a baking sheet and grill for about 2 minutes until turning golden, then turn over and grill for a further minute. Grill the pitta pocket for a few seconds on each side until it puffs open. Tuck the cheese and salad inside the pitta and eat immediately.
