Mango Salsa

Ingredients

  • 1 mango or 1/2 of a papaya, peeled, seeded, and chopped (1 cup)
  • 1 medium sweet green pepper, seeded and chopped (3/4 cup )
  • 1 small red onion, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 2 tbsps. pineapple juice or peach nectar
  • 1 Tbsp lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

Stir together mango sweet pepper, onion, jalapeno pepper, pineapple juice, lime juice, salt and pepper in a large bowl. Cover and refrigerate up to 3 or 4 days. Makes 1 1/2 cups
