But if unfiltered, it still has some fine yeast cells and grape bits in it. Most wines filter all of that out. But, if you leave it in, it continues to flavor the wine, making a more intense version of what you’re used to. So, it’s a more intense version of a wine you might normally pair with fish.

Ingredients

  • 3 cup hominy
  • 1 cup goat's cheese
  • 2 peaches
  • 6 green onions
  • 1 ounce red pepper
  • 1 cup basil
  • 1 cup lemon juice
  • 1 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine diced peaches, onions, and red peppers.

  2. Add finely chopped basil.

  3. Combine lemon juice, olive oil, salt, pepper, and half of the basil to make a dressing.

  4. Drain hominy and warm in the microwave.

  5. Combine hominy with veggies and fruit.

  6. Toss with the dressing.

  7. Garnish with basil and cheese crumbles.
