Tomato Salad Recipe with Pickled Onions

"If you have fresh tomatoes this summer, you will love this tomato salad recipe with pickled onions. A delicious feast of summer produce that can be served as a side dish or a light lunch. The homemade balsamic vinaigrette pairs with the sweet tomatoes and the bite of the pickled onions perfectly. I was able to let them marinate in that vinegar for about 2 1/2 weeks before diving in. And boy were they amazing! They are the perfect addition to this tomato salad recipe. Make yourself a few jars of these and keep them on hand for this recipe and other salads as well"

Ingredients

  • 2 tsp spicy mustard
  • 2 tbsp balsamic vinegar
  • 1/2 tsp black pepper
  • 1/4 cup extra virgin olive oil
  • 2 containers grape tomatoes (10 oz each)
  • 1/2 jar of pickled red onions
  1. Start making your salad by mixing the mustard, balsamic vinegar, and black pepper in a bowl. Stream in the olive oil while whisking. Add halved cherry tomatoes to the bowl. Toss to coat.

  2. Then add in about 1/2 a jar of those pickled red onions. Stir the salad and serve up in small bowls or as a side to a main dish. You will love this tomato salad recipe! Don’t have cherry tomatoes? No problem! Just dice up regular tomatoes and remove some of the seeds. The results should be similar.

  3. Don’t forget to start adding those delicious pickled red onions to your other dishes as well. They work great anywhere you would use regular onions. I use them to top my hot dogs, burgers, sandwiches, and of course this tomato salad recipe. They are actually great on any salad so make your own quick and easy batch today.
