Sunflower Seed Coleslaw

This sweet and nutty slaw complements crisp cabbage with sunflower seeds, sesame seeds, and honey. Sunflower Seed Coleslaw is a no mayo coleslaw recipe that's full of flavor and good for you too!

Notes

For best flavor, mix a day or two ahead of time and refrigerate.

Ingredients

  • 1/4 cup sunflower seeds
  • 1/8 cup sesame seeds
  • 8 cup cabbage, grated fine
  • 1/2 cup red pepper, finely chopped
  • 3 tablespoon canola oil
  • 2 teaspoon lemon juice
  • 1 tablespoon cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon sugar
  • fresh ground pepper to taste
  • salt to taste

Instructions

  1. Roast sunflower and sesame seeds in a dry skillet or toaster oven over medium heat. Stir or shake often. Seeds will brown and start to pop in about 2 to 3 minutes.
     
  2. Remove seeds from heat and mix them with cabbage and red pepper.
     
  3. Add canola oil, lemon juice, cider vinegar, honey, and sugar. Blend well and salt and pepper to taste.
