Southwest Salad

This chopped salad recipe is easy to make and absolutely delicious! Southwest Salad is a fresh salad recipe filled with avocado, black beans, tomatoes, peppers, cilantro, and more! It's tossed with a light dressing, so it tastes super fresh yet is still full of flavor. Ingredients

  • 1 (16-ounce) can pinto or black beans, drained & rinsed
  • 1 cup corn
  • 1 cup green or red bell peppers, chopped
  • 1 cup tomato, chopped
  • 3/4 cup red onion, chopped
  • 1/4 cup cilantro, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 4 tablespoon cider vinegar, or other vinegar
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoon chili powder
  • 1/8 teaspoon sugar

Instructions

  1. Combine all the vegetables in a medium bowl.
     
  2. In a small bowl, whisk together the vinegar, oil, chili powder, sugar and salt if using. Pour over the vegetable mixture.
     
  3. Cover and chill for at least 30 minutes so the flavors will blend. Can be refrigerated for 1 to 2 days if desired. Stir before serving.
