Ingredients

  • 3 tbsp olive oil
  • 3 oz red onions
  • 2 garlic cloves
  • 8 oz plum tomatoes
  • 1/2 cup white wine
  • 1/4 cup fish stock
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp sweet paprika
  • 32 oz large shrimp
  • 2/3 cup crumbled feta cheese

Instructions

  1. Heat oil in a skillet.

  2. Sauté minced red onions and garlic for 2 minutes on medium-low heat.

  3. Add chopped tomatoes, salt, cayenne pepper, wine, fish stock, and paprika.

  4. Bring to a boil and reduce to simmer for 10 minutes.

  5. Stir in deveined and peeled shrimp; cook for another 5 minutes until the shrimp turns to pink.

  6. Add in crumbled feta cheese before serving.
