Picnic Macaroni Salad

A picnic is not a picnic unless it has a great macaroni salad. This one is a family tradition and is perfect with burgers, sandwiches, or any other picnic foods. This creamy delight will be a great addition to your dinner or lunch.

Ingredients

  • 2 cup macaroni, cooked
  • 2 eggs, hard boiled and chopped
  • 1 tablespoon green onion, minced
  • 1/4 cup sweet pickle, minced or 2 tablespoons of relish
  • 1/4 cup celery, finely diced
  • 1 tablespoon capers
  • 1 cup cooked green peas
  • 2 tablespoon pimento, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoon pickle juice (do not use if relish is used)
  • 1 teaspoon mustard, prepared
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 2 tablespoon sour cream
  • 2 tablespoon parsley, chopped

Instructions

  1. Place cooked macaroni in large bowl. Add the egg, onion, pickle, celery, capers, peas, and pimentos.
     
  2. Combine dressing ingredients and add to macaroni mixture. Toss lightly with 2 forks to combine. Chill before serving.
